Arcangelo and Paola, with their son Pietro, have decided to breed only Red Pezzata d'Oropa cows on their farm, a native breed very suitable for the pastures of the Biellese pre-Alps that does not require special food additions. The cows graze in the mountain pastures from March to September, where they feed on fresh mountain herbs that give the milk its characteristic yellow color. From the milk, processed raw in the small company dairy, the butter is produced by surfacing, as per tradition and for this reason it is considered a precious Slow Food presidium.
